Ingredient List:
Sugar, 2 cups
Oil, 1 ½ cups
Eggs, 4, beaten
Self-Rising Flour, 2 cups
Cinnamon, 2 teaspoons
Vanilla Extract, 2 teaspoons
Carrots, 3 cups, grated
Nuts, ½ cup, chopped
Butter, ½ stick
Cream Cheese, 1 pkg.
Confectionerâs Sugar, 1 lb. box
Milk, if needed

How to Cook:
Oil cast iron skillet well and place in 300â oven.
Combine sugar, oil, eggs, flour, cinnamon, and 1 teaspoon of vanilla, carrots, and nuts.
Pour into the cast iron skillet and bake for 40 minutes or until the fork pulls out clean.
Cream butter, cream cheese, and confectionerâs sugar.
Add milk if needed, to achieve a good consistency.
Spread icing on a cool cake. Slice and serve.
